Five new teams of professional pastry chefs face the dynamic duo of judges Cherish Finden and Benoit Blin.

Five new teams of professional pastry chefs face the dynamic duo of judges Cherish Finden and Benoit Blin.

The first challenge is to create 36 each of two types of miniatures – one called a fraisier, a classic French cake made with strawberries and crème pâtissiere.

The second is a verrine, which is a little glass filled with layer after layer of jellies, ganaches, mousses and creams. The showpiece challenge sees the teams reinvent a classic Pavlova.

The dessert is named after the ballerina Anna Pavlova, so the judges are looking for elegance, grace and beauty, as well as a new twist on the perfect meringue.
